The leftovers don't seem nearly as pretty as that golden bird (just before carving time). But oh, do we make some great soups out of them! My great grandpa used to have a giant pot of soup stock simmering away most every time we were over to visit. It was the sixties; the convenience of canned soups and prepared foods was really catching on. But none of that held a candle to great grandpa's homemade soups!We just had a few bowls of excellent Turkey Soup for dinner tonight. I had some peas in the freezer, which I added to some sauteed onions, carrot, and fresh herbs. A few noodles (or rice) and leftover turkey complete the soup. But it starts with an excellent base: Chicken Stock (in this case, Turkey Stock). It's pretty effortless to make, and certainly puts our resources to work, without wasting a thing.
