
Butternut, Acorn, Pumpkin... there are a lot of squashes out there, but for richness and flavor, I love the Butternut Squash. I added some spices to my soup recipe; now it tastes like pumpkin pie, only way healthier. Curry powder adds just enough flavor to remind me that it's not dessert. And the recipe calls for cream, but I've left it out and it's still good. I've also substituted coconut cream for the dairy cream- what a treat!
